Malibu Rum Cake
This one is out of "Sandra Lee Semi-Homemade Cooking" and it ROCKS!
Cake-
Cooking spray (I use the Pam for baking)
1 package (18.25 oz) classic yellow cake mix (Duncan Hines Moist Deluxe)
1 cup Malibu Rum
1/2 cup vegetable oil
1 (3.4 oz) vanilla instant pudding and pie filling mix
4 eggs
Rum Glaze-
1 cup packed golden brown sugar
1/4 cup water
1 stick butter
1/4 cup Malibu rum
Cake Prep-
1. Position rack in center of oven and preheat to 325F. Spray a 10 inch Bundt pan with the non-stick cooking spray.
2. Using an electric mixer, beat all the cake ingredients in a large bowl for 2 minutes. Transfer batter to prepared pan. Bake until a toothpick inserted into center of cake comes out clean, about 45 minutes (I started checking at 35 minutes, because I hate dry cake and it was ready in about 40 minutes with the toothpick not quite clean).
3. Cook cake in pan for 20 minutes. Invert cake ointo platter, then carefully remove pan. Allow cake to cool completely.
Rum Glaze Prep-
4. Meanwhile, stir sugar and water in a medium heavy saucepan over medium-high heat until sugar dissolves. Add butter. Simmer until mixture thickens and is syrupy, stirring often, about 5 minutes.
5. Remove saucepan from heat ad whisk in rum. Cool glaze completely. Drizzle glaze evenly over cooled cake and serve.
Storage- Cover tightly and store rum cake at room temp. for up to 3 days. Cover tightly and store glaze in fridge for up to 3 days. Best served at room temp.
I kept the glaze seperate so the cake didn't go to mush (it really soaks into the cake). This is so good, I may be giving this out as Christmas gifts this year.
I make a cake very similar....but instead of a yellow cake mix I use a flavored one....pineapple with a coconut pudding and mailibu rum(pina colada cake) or a lemon cake mix with lemon pudding with bacardi limon for the rum. and in the rum sauce instead of water use a coordinating juice...either lemonade for the lemon cake or pineapple for the pina colada cake. Ive also done orange cake with french vanilla pudding and bacardi o rum, it makes a creamsicle cake using orange juice for the glaze....YUM
Got any cake recipes that have NO fat and NO calories? I'm a fat heffer cow. Although sounds scrumptious, I certainly am going to try to stear clear of junk this year.
