Default Divinity

Divinity

3 cups sugar
1/2 cup Karo syrup
1/2 cup cold water
2 egg whites
1 tsp. vanilla

Heat syrup, water and sugar to soft ball stage. Add 1/3 to 1/2 of syurp mixture to beaten egg whites - beat with mixer. Boil remainder to hard ball. Add to beaten egg whites/syrup mixture. Beat until the peaks hold and it losses it's gloss. Add 1 teaspoon vanilla. Put bowl in pan of hot water to keep divinity soft. Drop by teaspoon onto wax paper.

This is the most recent recipie I've used. I've used other recipies with success as well. But I think it's more how you make it that effects final results. I get everything out ahead of time. I use a heavy duty pan - I think it's a dutch oven - I use it for all my candy making. I divide the egg whites and put in a big bowl. Don't use a medium/small bowl, as that will make it difficult for the divinity to set. I beat my egg whites as I stir my sugar mixture on the stove. I find that if you get the egg whites as stiff as possible they turn out better. Don't over heat the sugar mixture - when it reaches hard ball stage get it off the heat and into egg whites. Mix with electric mixer. This step can take quite awhile some days - humidy will effect how long it takes to get your stiff peaks to form. When you are ready to drop onto wax paper - no time to dilly dally, you need to move fast as it will set quickly. Leave out till it sets. When it's cool, store in air tight container. Best if used within the next few days, but you can store in a cool location for some time and it's still good to eat.

If it's humid, your egg white / syrup mixture may net set and you will end up with a white, gooey, but tasty mess.

If you over heat syrup mixture - the final product will be dry / brittle - but still will taste OK. The texture will be off.

OPTIONS - You can try different flavors instead of vanilla and you can add 1/2 cup of nuts or other items (like crushed candy canes) if you like before dropping onto wax paper.
