Zesty Shrimp and Pasta (lowfat)
8 oz linguine, cooked 3/4 cup of Light House Italian Reduced fat dressing, divided 2 cups of fresh mushrooms 1 small onion slice thin (I used green onions) 1 14 oz can artichoke hearts, drained, quartered 1 lb uncooked cleaned large shrimp (I bought small shrimp that were frozen) 1tbsp chopped fresh parsley 1/4 cup grated parmesan cheese cook pasta as directed. heat 1/2 cup of dressing over med heat. stir in mushrroms, artichokes, and onions; cook for 3 mintues or till onions are crisp-tender, stirring occasionally. add shrimp and parsley, stir. cook 2 min or until shrimp are pink and veggies are tender. drain pasta; return to pot. add shrimp mixture and remaining dressing, toss lightly. sprinkle with cheese. makes 6 servings, 1 cup each cal 310 fat 6g carb 37g fiber 3g |
