Giving away FREE crotch extenders -- do I have any takers??

This isn't a weightwatchers recipe, but it's not too bad as far as fat and cals, especially if modified a little AND it's YUMMY!!
Parmesan Crusted Chicken in Cream Sauce 2 cups brown rice 1 can (14 oz) fat-free reduced sodium chicken broth 6 ritz crackers, finely crushed 1 Tbsp Grated parmesan cheese 4 boneless, skinless chicken breasts 2 tsp oil (i used cooking spray) 1/3 cup chive and onion light cream cheese spread 1 bunch asparagus spears cook rice as directed on package, using 1 1/4 cup of broth and 1/2 cup water meanwhile, mix cracker crumbs with parmesan cheese on plate. rinse chicken with cold water shake off excess water. dip chicken in cracker mixture and coat Steam asparagus heat oil (cooking spray) in large skillet. add chicken, cook 5 to 6 minutes on each side or until chicken is browned and cooked thru. place chicken on serving plate and keep warm. add remaining 1/2 cup broth and cream cheese spread to same skillet. cook on medium until mix comes to a boil. stir contantly. simmer 3 minutes or until sauce thickens. spoon over chicken. Serve with rice and asparagus. cal 420, fat 12gm, carb 41gm, fiber 3gm. (these numbers include the rice and asparagus) |
