When we did Sugar busters I used the book "Sugar Bust for Life" by Ellen and Theodore Brennan (of "Brennan's" restaurant in New Orleans). There are a couple of different ones and I had the best luck with the red one (I think it's the 1st one they did). In the back they have lists of brands and stuff to buy to help with lower sugar choices. I think it's a lot easier now though because so many companies are adding "lower-sugar" options. Here are a couple of my favorites: Baked Chicken Supreme 1 3lb chicken (cut into pieces) I always just use breasts 1 tsp salt 1 tsp pepper 1 cup chicken broth 2 Tbl olive oil 1 Tbl lemon juice 1 Tbl soy sauce 1 Tbl Italian seasoning 1 tsp paprika 1 tsp parlic powder 1/2 tsp onion powder 1/2 tsp dry mustard 1/4 tsp ginger Preheat oven to 350F, place chicken in baking dish and season with salt and pepper. In a bowl combine rest of ingredients and pour over chicken. bake for 1 and 1/4 hours and baste occasionally. Rosemary Chicken 1 4lb chicken quartered (again, I use breasts) 6 tsp garlic minced 2 Tbl fresh rosemary (I use dried if I don't have fresh) 1/2 cup olive oil 1/2 cup fresh squeezed lime juice (I use the bottled stuff) 1/2 tsp salt 1/4 tsp fresh ground pepper (I use the regular stuff) Combine all ingredients in a bowl, add chicken to the bowl and coat with the marinade. refrigerate for 3-4 hours. heat large skillet and fry chicken, covered, for 15 minutes on each side until crispy. Hope this gives you an idea of the stuff in the book.They're are seafood and beef recipes in there too, but I prefer chicken. Also you could adjust the recipes you have, take out any added sugar and use whole grain pasta or brown rice. HTH. GL! |
