Default Crock Pot Recipes

After reading the posts on budgeting and seeing there are a lot of ideas for crock pot cooking, lets post them! I know my DH is really missing his home cooked meals as am I. I feel I just don't have time or energy.

I will post my most favorite which would be Shoyu Chicken (I have posted this once before)

In crock pot place 3-4 chicken breasts (I put as many will fit in my pot)

In a bowl combine 1 cup brown sugar, 1 cup soy sauce, and a little garlic powder. Stir together

Pour this mixture over the chicken breasts and cook on low for 6-8 hours or high for 4 hours. About an hour before it is done (or just before it is done, I like to let mine soak) shred the chicken. Serve over HOT rice.

This is a new one I just got. For those of you that have a Cafe Rio around you it is suppose to be there pork barbacoa. I think it comes pretty close, I love it! DH doesn't really like the sweet though.

3 lbs. Pork
1 C. Water

Cook in slow cooker until you can shred then shred it up.

Add-
1 t. garlic salt
1/4 C BBQ Sauce
3/4 C Ketchup
1/3-1/2 C Sugar
Cook for another hour. Recipe can be altered for more or less pork.

The orginal recipe has you serve as a salad in a warm tortilla with tomatoes and cheese and such. We ate it just like burritos with rice and black beans.

When I want to please Erik and not my tummy I do the same thing but with this sauce.

* 1 (8 ounce) can tomato sauce
* 1 cup barbeque sauce
* 1 onion, chopped
* 2 (4 ounce) cans diced green chile peppers
* 1/4 cup chili powder
* 1 teaspoon ground cumin
* 1 teaspoon dried oregano
* 1/4 teaspoon ground cinnamon
* 2 1/2 pounds boneless pork loin roast, trimmed

Add this at the very, very end. I've made it without but it's much better with.
* 1/2 cup chopped fresh cilantro

If my pork is really tender I have acutally made this without the tomato and bbq sauce just to keep it interesting.

Pork Chops to live for:

4 pork chops (boneless if you want to make really easy)
1 egg, beaten
1/2 cup all purpose flour2 Tbl. shortening
1 large onion, sliced
2 (10.75 ounce) cans condensed cream of mushroom soup
2 cups milk

1. melt chortening in large skillet. dip pork chops in beaten egg and dredge through flour. sear chops until brown on both sides.
2. place browned pork chops in slow cooker, add sliced onion, soup and milk. cook on high for 4-5 hours or low 8-10 hours.
The meat just falls apart.

I have a few requests from the other post on CP recipes

Donna if you get a chance could you post your recipe for Cheesy Italian chicken over rice and Scalloped potatoes with ham. They both sound so yummy and if they are in a crock pot, even better

and Bel, how do you do your sweet and sour chicken in a crock pot? I have a few guesses but I'd love to see how you pull it off

Sweet & Sour Chicken

3 Chicken Breasts, cut into cubes (I use the chicken still frozen and cut it up while frozen - i don't even defrost it )
1/2 C green pepper, sliced or cubed
1/2 C onion, sliced or cubed
1 (10 oz) jar sweet & sour sauce - (found in asian section of grocery store. I use LA CHOY brand)
1 (15 oz) can pineapple chunks
3 T cornstarch
3 T water
rice

- green pepper & onion in crockpot
- top w/ chicken
- pour jar sauce and pineapple on top of chicken
- cover, cook on low 4-5 hrs
- once done, stir together in small bowl cornstarch & water
- add to crockpot - mix well- and turn heat to high for 30-60 min. (this will thicken sauce)
- serve over rice.

Belinda's Roast

Roast Meat - I usually get one about the size of two grapefruit.
3 medium potatoes - peeled and cubed
Small bag of baby carrots/pre-sliced carrots/OR 4-5 reg. carrots cleaned and sliced
1 small onion, cut in half (for flavor only - we do not eat it - I remove before serving
1 can cream of mushroom or cream of celery
1/4 C water
1 envelope Lipton Onion or Beefy Onion soup mix
Pepper to taste

- place meat in crockpot
- top with potatoes and carrots
- In small bowl, mix cream soup with evelope soup mix
- top veggies with mixture
- pour in water
- sprinkle with pepper
- top w/ onion halves
- cook on low 8 hrs or high 4 hours
- once done, I make a gravy by removing the meat and veggies and store in closed container. I pour the 'juice' into a pan and mix a solution of 3T cornstarch with 3T water and pour into 'juice'. I heat on medium until it thickens and then serve this on the side to top the meat and veggies. For me, I skip the gravy and just use A1 sauce on my meat.
