Default Looking for recipes for SOFT fluffy cookies

Is there anything of the sort?

My choc. chip recipes that I've tried that are soft are flat and look horrible. My nicely shaped, thick choc. chip cookes are hard and crunchy.

Does anyone have a recipe for sugar, choc. chip, peanut butter, etc that are soft and full looking? I'm tired of making batches upon batches of cookies only to find that I've made 7-8 dozen cookies that are completely wrong.

We made these this year and they are light and fluffy....I used crisco instead of butter or margarine and use full sized red and green m&m's instead of minis and used green sugar and they are so yummy....Kate has to have one with a glass of milk everynight after dinner. She loves em.
This is from M-MS.com

Sugar Cookie Jewels

1 cup (2 sticks or 240mL) butter or margarine
1 cup (240mL) granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups (480mL) all-purpose flour
1 teaspoon baking soda
1 12-ounce package (1 3/4 cups or 340g) M&M's"® Semi-Sweet Chocolate Mini Baking Bits
granulated sugar as needed

Preheat oven to 350°F (180°C). Cream together butter and sugar until light and fluffy; add egg and vanilla. Combine flour and baking soda; add to creamed mixture just until blended. Stir in "M&M's"® Chocolate Mini Baking Bits. Shape dough into 1-inch (25mm) balls. Place on greased cookie sheets about 2-inches (50mm) apart. With bottom of glass dipped in sugar, flatten dough very slightly so as not to crush "M&M's"® Chocolate Mini Baking Bits. Bake 10 to 12 minutes or until edges are light golden; let cool 1 minute before transferring to wire rack to cool completely. Store in tightly covered container.

MAKES ABOUT 4 DOZEN COOKIES.

Thanks! I need some serious help. My old recipes that I used to have are missing! I can't believe that they are lost, but now I'm a wreck because I had such good recipes! DARN IT!

Ultimate Chocolate Chip cookies (comes with the butter flavored crisco)

3/4c Butter flavored Crisco
1 1/4 c firmly packed light brown sugar
2 TBS milk
1 TBS vanilla
1 egg
1 3/4 c all purpose flour
1 ts salt
3/4 tsp baking soda
1 cup semi-sweet chocolate chips (I use WAY more that that)
1 C Coarsley choppen Pecans ( I never use and I know you are allergic)

1. Preheat oven to 375
2. Combine butter flavored crisco, brown sugar, milk and vanilla in a large bowl. Beat at meadium speed until well blended. Beat egg into creamed mixture
3. combine All purpose flour, salt, and baking soda. Mix into creamed mixture just until blended. Stir in chocolate chips and pecan pieces.
4. Drop rounded tablespoonsfuls of dough 3 inches apart onto ungreased baking sheet. Bake one baking sheet at a time at 375 for 8-10 mins for chewy cookies or 11-13 for crips cookies. DO NOT OVERBAKE.
Cool 2 on baking sheets. Remove cookies of cooling rake.

Makes about 3 dozen.
