Here's what I've been making a lot of:
For breakfast (along with some fruit):
1. banana bread made with left over bananas (really cheap)
2. pumpkin bread
3. cinn. sugar bread
For dinner I've been cooking a lot in the crockpot. Making chicken quesadillas, bar-b-q pork sandwiches, sweet and sour chicken.
1. For the chicken quesadillas, i just throw frozen chicken in the crockpot and mix up a taco seasoning packet according to the directions and drizzle that on top. cook the chicken all day and then use flour tortillas to make the chicken and cheese quesadillas for dinner.
2. For the bar-b-q pulled pork sandwiches, I buy an inexpensive pork butt (I know it sounds gross, but, it's a cheap piece of meat and doesn't have a TON of fat on it). I pull the pork in the crock pot with 1/4 cup of vinegar and 1/2 cup of water. The vinegar water mixture tenderizes the meat. By the end of the day, I have fall apart tender pork. I drain off the liquid, pull the pork apart and put it back in the crock pot with a bottle of Cattlemans bar-b-q sauce and heat it through. I serve this on hamburger buns. The kids LOVE it. And, usually, the pork butt is $5.00 for a good 3-4 pounder!
3. I also just do the chicken in the crockpot with a can of cream of mushroom and serve with brown rice and a veggie (broccoli is what I serve).
4. Oh, and chicken pot pie! Really easy AND cheap. I brown some chicken, shread it and put it in a 8x8 glass dish. Add a small package of frozen mixed veggies (16 oz I think) still frozen right from the bag and a can of cream of chicken. Stir together. In another bowl, mix one stick of butter, 1 C of flour and 1 C of milk. Pour flour mixture on top of chicken and veggies. Cook on 350 for 30 minutes until brown and bubbly. YUM.
I also make candied yams....yams in a can, cooked with a syrup of 1/4 cup of syrup, brown sugar and butter. Pour over top of yams and top with marshmellows and bake. YUMO.
I also have a great garlic cheese biscuits that I usually serve with roast or meatloaf. Just garlic powder, shredded cheddar and butter mixed into bisquick with melted garlic butter brushed over the top and sprinkled with herbs. YUM again.
