Easy Dinner Recipes
Speaking of what's for dinner, can anyone share their quick dinner ideas? Either with no work for the crockpot or something I can prepare and freeze? I'm not in the cooking mood lately, but, am also looking for some ideas for foods that I can make and freeze for when the baby comes.

My sister makes up big batches of lasgnaga and freezes them in meal size portions to pop in the oven at a later date. She basically sets aside about 1 day a week to make up a bunch of food and freezes most of it, so she doesn't spend so much time during the week preping meals.

I've shared this before, I think... it's a family favorite.
Chicken
(whatever your family likes... I use boneless skinless breasts most of the time)
1 can of diet Coke
1/2 cup ketchup
1/2 cup BBQ sauce
Mix together....
Pour over chicken in crock pot - and cook for 8 hours or more on low.
I love to shred the chicken while still in the crockpot and let it absorb the sauce. It's so easy, a 4 year old could do it.
I vary how I serve it, sometimes with baked fries and corn, or mashed potatoes. Sometimes on rolls... sometimes not. Yum-O!

I recommend "Don't Panic-Dinner's in the Freezer". There are several recipes in there that I make ahead and freeze. We've had the most luck with the chicken recipes. I just got Racheal Ray's Express Lane cookbook and I'm gonna try a couple of recipes out of it this week. I'll let you know how they turn out.
