Giving away FREE crotch extenders -- do I have any takers??

I made this last night and it was YUMMY and easy! I had the recipe cut out twice from different magazines, so you guys may already have it.
Foil-Pack Chicken and Mushroom Dinner 1 pkg (6 oz) Stove Top stuffing mix for chicken 1 3/4 cup water, divided 6 small, boneless skinless chicken breasts about 1/2 thick (I have the butcher at the grocery store half the chicken breasts for me so that they are thiner.they do it for free and it saves me pounding them down to 1/2" plus you then only actually use 3 full size chicken breasts for the recipe 4 slices Oscar Mayer Thin slices smoked ham, chopped (I chopped it in the cuisinart) 1 cup sliced fresh mushrooms 1 cup frozen peas 1 can (10 3/4oz) condensed cream of mushroom soup (can use low-fat) heavy-duty foil preheat oven to 400F. mix stuffing mix with 1 1/2 cups of water. dividing evenly, place stuffing in center of 6 separate sheets of heavy duty aluminum foil (torn off at about 12-14" wide). layer chicken, ham, mushrooms, and peas on top of the stuffing, dividing evenly between the 6 foil packs. mix soup with remaining 1/4 cup water and pour equal amounts over each pack. bring up foil sides. double fold the top and ends to seal pack, leaving room for heat circulation inside. complete all 6 packs and place on 15X10X1 inch baking pan. bake 30-35 minutes or until chicken is cooked through. let stand for 5 minutes. place packs directly on dinner plate. cut slits in foil to release steam before opening. I thought it needed a little pepper and it was great and easy. Clean up was simple too. I may try to put the packs together and freeze them for later. |
