Inexpensive dinner idea
We're having mother's day lunch at our house on Sunday. What's a fairly inexpensive thing to fix for 10 people? (Oh, and not too difficult...I'm not the best cook in the world!!)

Re: Inexpensive dinner idea
Pasta salad is always great, refreshing, simple and somewhat cheap to make. Some 'curly' or 'bowtie' pasta, some EVOO (extra virgin olive oil), lemon juice, artichoke hearts, tomatoes, fresh cut basil, black olives, sun dried tomato feta cheese...YUM-MO! I will have to go home and get you the recipe if you want it. It's even BETTER when it's fixed the night before and just let it sit in the fridge. It's a chilled pasta salad.
Little finger food ham biscuits are always nice. A fruit tray with some strawberries, grapes, melon, is nice. Especially paired with some cut up cheeses. A veggie tray too...with cherry tomatoes, celery, broccoli and a dip. You can buy those trays to make it easier, or make them yourself.
Finger foods or 'easy, light' foods will probably be best. Good luck! And let us know how it goes!!!

Sorry had to add an additional element to the ham biscuits...
Do ham and swiss cheese and brush on the glaze (ingred. below):
1 Stick of Butter
1 T Honey
1 t Mustard
1 t Worcestshire sauce
Spread sauce on top of completed biscuits – sprinkle poppy seeds on top and bake on 350 – 400 til cheese melts and/or top is toasty brown. YUMMMMMMM!

Belinda is obviously a Rachael Ray fan!!! (EVOO!)
I was going to suggest either spaghetti or a chicken pasta toss.
With the chicken pasta... I always use penne. I sautee broccoli, green and red peppers, and add it to the pasta. When I cook the chicken, I parmasean crust it. Mix the veggies with the pasta, drizzle some olive oil over it....and add the cut up chicken pieces. It's almost elegant, but really easy and pretty quick!!

I'll take any recipes y'all have! And, Belinda, you're fine. My family's the weird one's that call the noontime meal, dinner and the nighttime meal, supper...
