I'm currently trying to do Weight Watchers...but, have found that a lot of regular recipes can be made in it to save time. Speghetti, Mamwich, Chicken, etc. I tried a recipe just yesterday, and it turned out to be really yummy. I will look for some more and let you know...but, here it is:
Pineapple Pork
2 lb. bonless pork loin, cut into bite-sized pieces
1/2 cup Honey Barbecue Sauce
1 can (20 oz.) pineapple chunks in juice, undrained
3 Tbsp. cornstarch
2 green peppers, coarsely chopped
2 red peppers, coarsely chopped
6 cups hot cooked MINUTE white rice
1/4 cup peanuts, chopped
1. Place cut up pork into slow cooker. Add barbecue sauce; mix well.
2. Drain pineapple, reserving 1/4 cup of the juice. Add reserved juice to cornstarch in bowl; stir until well blended. Pour over pork mixture; stir until well blended. Top with pineapple chunks and peppers; cover with lid.
3. Cook on HIGH for 5 hours or LOW for 9-10 hours (until pork is tender and cooked through).
4. Serve over rice. Sprinkle with peanuts.
Yield: 8 servings
Nutrition (per serving) - includes rice and peanuts
Calories: 410, Total Fat: 7g, Fiber: 3g = 8 WW points/serving

Like Amy, I too am looking for some crockpot recipes...my problem is that I'm doing weight watchers...so I have to be careful and keep dinner under 10 points.
Does anyone not only have crockpot recipes, but healthy ones too???? Or am I asking for the impossible???

I never knew you could make Lasagna in a Crockpot That intrigues me!
I have a Cheesy Potato Bacon soup going now..If it turns out I will post the recipe!

This is my fav in the crock pot:
Pork chops to live for.
4 pork chops
1egg, beaten (try egg substitute for ww)
1/2 c all-purpose flour
2 tablespoons shortening (maybe cooking spray for WW)
1 large onion sliced
2 cans (10.75 ounce) cream of mushroom soup(try the low fat version for ww)
2 cups milk
melt shortening in large skillet. dip pork chops in beaten egg and dredge through flour. place chops in pan and sear until brown on both sides.
Place browned chops in slow cooker, add sliced onion, soup, milk. cook on high for 4-5 hours or low for 8-10.
I usually add salt and pepper to taste.
