Ok, I know, I know, asking all these questions you would think this was my first thanksgiving. But every time I make a gravy for a chicken dinner, it doesn't thicken up. It tastes good but it is really runny.

I use the dripping, do a rue from 1/4 c butter, 1/4c flour. What am I doing wrong?

I use cornstarch and water to thicken my gravies. I don't use flour. Cornstarch just seems more stable and fool proof. One tablespoon on cornstarch to one tablespoon of water. Make sure the water is cold so that it mixes well. mix it really well and then slowly add to the gravy to thicken. It will need to cook for a good 3-5 minutes to thicken it.
