Default Rebecca...need help with Divinity

Ok instead of begging you to make me some this year and mailing me some like last year. Im gonna get off my and make it....HELP!

The recipe I have from your post about it was.....Divinity

Im following this recipe....and instructions...have anything else to add. I dont want to screw it up, last year my mom and Kate and I fought over the stuff you sent me....It was so yummy.

I was going to make some last week for a bake sale but didn't get to it.
Basically what I do is:

Put wax paper and 2 small spoons on a table ahead of time. Put a hot pad down by this or something else to protect your surface if needed to put your bowl on as it will be hot.

Separate the eggs - put the yokes away for some thing else.

If you are using a hand mixer, Use a BIG bowel, put the egg whites in that bowl. I often mix the egg whites while stirring the sugar mixture. You want them to be super stiff peaks. I usually get it to the consistency I want and then let it sit. Then I'll mix it up quick when the surup mixture is almost done, as it kind of divides while it's sit.

Put the sugar, corn surup, and water in the sauce pan and put on medium heat I think. And stir it so it doesn't burn. Burnt divinity doesn't taste so good.

You don't have to put the candy thermometer in until the mixture starts to boil if you don't want to.

Watch you candy termometer. If you cook it too hot it will crumble and be tough. To cool and it may not set. And make sure your house isn't humid. Divinity doesn't always set if it's really humid. Some thing to keep in mind if you are doing a bunch of laundry and other baking/cooking.

I found it works well to pour 1/4 to 1/2 of the surup mixture into the egg whites when it gets to softball stage. Then let the rest get to Hardball? and add to mixture. When you white mass looses it's gloss and holds a peak, add vanilla (or other flavor if your being creative) and stop mixing. QUICKLY drop onto wax paper like you would cookie dough. It dries quick. When it firms up a bit - won't take long - put it in a container and keep it covered or it will get as hard as rock.

Might need to be beaten longer. You need to beat until it loses it's gloss. Should harden quickly. Also - if using a candy thermometer, make sure it is accurate - (i.e. boil water and make sure it's boiling at the right temperature. then adjust accordingly if your thermometer is off.)

I was worried I beat it too much. It lost it's gloss and former stiff peaks, so I figured it was done! It was just a bit sticky to the touch, I left it out overnight and I did stiffen up. I know the thermometer is accurate because my mom uses it all the time to make caramel corn. I guess next time I will just beat it more! Kate loves it and Ed even ate some and he's not into sweets!

If it stiffened up all is good right? I have a tendency to over beat mine. And then it just crumbles after it sets. It will do that a bit anyway, but if you over cook it and/or over beat it you have other problems. But the only batch I've ever made that tasted bad was the one I burnt. That's the one nice thing about Divinity, it almost always tastes good if you like a good sugar rush. Even if it's not quite perfect. Like the hot humid day it turned pretty much into Marshmellow cream....
