Another question... how many ounces should Brody be drinking now at almost 7 weeks old when we give him a bottle of EBM? Is there a chart anywhere that says how much and at what age they are supposed to be getting it?

If he is nursing - there is no "amount" he should be drinking. Just let him nurse on demand. As long as he is producing enough wet/dirty diapers, is happy, and is growing well, he is getting enough. Every child is different. So don't worry about HOW MUCH - just keep note of the items above.
