I want to store my EBM in ice cubes, since he only still eats about 2 oz at a time. How do you lable it if you have multi trays, and how do you know which is oldest?

I never did ice cubes, but if I did, I would probably put all of one days in 1 bag. Then just label by the day. Some people divide it up more than that, but I don't see the need. Just pull out the number of cubes you need from the oldest bag and defrost.

Yep I agree....once the milk was frozen, I would throw the cubes from that day in a ziploc-quart sized and mark it with that date.

I always labeled the lid on the tray with a piece of tape, then once frozen I transfered them to bm bags labeled with the date, that way I didn't forget.

I always put four cubes to a bag.

If twisting doesn't do the job, you can dip the try quick in warm water and see if that does the trick. In a worst case senario, you will need to use the milk up in 24 hours. But if you put the cubes in, minus any melted milk you should be OK.
