Whole Wheat Banana Bread
2 cups sugar 2 cups mashed bananas (about 5 medium) 2/3 cup vegetabe oil 4 eggs 3 cups whole wheat flour 2 teaspoons baking soda 1 teaspoon salt 1/2 teaspoon baking powder 1/2 cup coarsely chopped nuts (optional) 1. HEAT oven to 350. Brease bottoms only of 2 loaf pans, 9x5x3 8-1/2 x x 2-12 inches. Beat all ingredients in large owl on low speed 30 seconds. Beat on medium speed 45 seconds, scrapinb bowl frequently. 2. POUR into pans 3. BAKE 50 to 60 minutes or until toothpick inserted halfwaybetween center and edge comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans. Cool completely before slicing. 2 loaves. This is a General Mills, Inc. reciepie. Personally I use olive oil and thrown in what ever I have for bananas - trying to get about 2 cups worth, but often more than that. I recently discovered if I add more bananas and a tad more oil it turned out a bit moister. It's heavier than regular banana bread, but most people who have had it when I make it like it. |
