I think he assumed it would be boring because there was a LOT of discussion and not much "hands-on" that first night. Though, an hour of nothing but knife work was quite a bit of hands-on, in my opinion. =)

The Chef is classically trained, so he teaches the same way. He graduated from the Culinary Institute of America and has written a few cookbooks, one of which is a top selling BBQ book on Amazon.com. He's an interesting guy!
